Cornish hens and wild rice mingle is a wonderful recipe for the Holidays, or anytime. I usually make this for Thanksgiving or Christmas for my family. I thaw the Cornish hens, then cut them in half and lay them on the rice mixture. One half hen is usually enough for one person, along with the rest of the food prepared for a meal. Enjoy.
Cornish Hens On Wild Rice Mingle Recipe
Ingredients:
1/4 c. butter
1/2 c. chopped celery
1 (4 oz.) can mushrooms, drained
3/4 c. raw regular or processed white rice
3/4 c. wild rice
2 env. onion soup mix
3 1/2 c. boiling water
4 Rock Cornish hens, thawed
Salt
Cooking Directions:
In medium skillet heat 2 tablespoons butter and saute celery and mushrooms until golden, then add white rice and saute until golden. Stir in wild rice. Spread on bottom of roasting pan. Combine onion soup mix with water; pour over rice mixture. Rub cavities of hens with salt, then place on rice mixture. Rub hens with 2 tablespoons soft butter. Roast 50 to 60 minutes at 400 degrees or until golden brown and tender, spooning liquid from pan occasionally over hens.
This cake recipe makes a great dessert anytime, and is very good.
Chocolate Earthquake Cake
Ingredients:
1 box German chocolate cake mix
1 3.5-ounce can sweetened flaked coconut
1 cup chopped nuts
1/4 cup margarine
8 ounces cream cheese, softened
1 16-ounce box powdered sugar
Instructions
Prepare cake batter according to package instructions. Preheat oven to 350 degrees. Grease a 9-by-12-inch baking pan. Cover the bottom of the pan with the nuts and coconut. Pour cake batter on top. Melt margarine in a bowl. Add the cream cheese and powdered sugar. Stir to blend. Spoon over unbaked batter and bake for 40 to 42 minutes. You can’t test for doneness with this sticky cake. The icing sinks to the bottom while baking and makes a gooey white ribbon throughout.
